Green Goddess Broccoli and Arugula Soup

Green Goddess Broccoli and Arugula Soup

1 tsp coconut oil
1/2 medium onion, chopped
2 cloves garlic, finely chopped
1 large head of broccoli, cut into medium florets
1 c. arugula
2 1/2 c. vegetable stock, preferably homemade
juice of 1 lemon, organic
1 inch piece of ginger, chopped, skin on
salt and pepper

Heat the coconut oil in a medium soup pot over medium high heat. Add the onion, ginger and garlic and cook until soft, about 3 minutes. Add the broccoli and arugula. Stir frequently until the broccoli is bright green and arugula has wilted, 4-5 minutes. Pour the broth in and bring the soup to a boil. Reduce the heat to low and simmer until the broccoli is fully cooked, 5-8 minutes. Carefully transfer the soup to a blender and blend on high spped for 1 1/2 minutes. Add lemon juice, salt and pepper to taste and blend for another 30 seconds. Serve with a salad and any protein of your choice.
